The Carillon's Sparkling Wine Dinner
WHO: The Carillon at AT&T Hotel and Conference Center
WHAT: The Carillon is celebrating the holiday season with a special Sparkling Wine Dinner on Wednesday, December 6 at 6:30 p.m.
Curated by Chef de Cuisine Dan Bressler, the three-course dinner will feature a selection of champagnes and sparkling wines from European destinations such as Spain, Italy and France, each with a complementing dish inspired by the region.
Amuse Bouche (Spain)
Oyster on the half shell, Pedro Ximenez mignonette, crispy chorizo and garlic chive
Pairing: Gramona Cava, Brut Reserve
First Course (Italy)
Hausbar Farm kale and house made ricotta agnolotti in a light cream sauce with fried Scamorza cheese
Pairing: Contadi Castaldi Brut Rosé Franciacorta
Main Course (France)
Magret de Canard
Pan roasted duck breast, braised leeks, potato confit, local honey and blood orange
Pairing: Perrier Jouët Grand Brut Champagne
Almond Frangipane Torte
Ginger-cranberry confiture, brown butter snow, and tangerine-champagne jewels
Pairing: Domaine Serol Turbullent
